Cooking with Bacon: Week 1
And now for my new challenge: working my way through Bacon Recipes in 2016!
Guess it’s not exactly Julia Child, but it could be fun. You may hear (read) some swearing along the way. Some of these recipes will push me into directions I don’t normally stray when I cook (although I am looking forward to wrapping many different things in bacon), and many of them will need to be adapted for a gluten-avoiding person such as myself. But, it sounded like a fun idea when Kirsten and Maynard gave me this little cookbook all about my signature ingredient, so…Challenge Accepted!
And for the first recipe, we have
Twice Baked Potatoes!
I argued with this recipe for a minute. It only has bacon as “optional”, but this is a Bacon Recipes book. What’s this waffling all about? But then I settled down and got to cooking.
Baked potatoes, evaporated milk (I used cream), cheese and butter, along with the chives and bacon.
Scoop out the potatoes and mash everything together – then refill the potatoes
Bake
Garnish
Eat…yummy!
Now, to figure out what I will make this week!

Baked potatoes with bacon crumbled on top, is one of my favorite meals! Yours turned out wonderful! 🙂
